Easy Crock Pot Chicken Lo Mein

I’ve been dying to share this formula with you all for a short time now… however with my time without work through the vacations, it’s been sitting in my drafts folder… till today!  We’re massive Chinese takeout fans here within the Chunky cook house, and lo mein is usually a favourite.  I’ve been on the seek for an ideal aper of that classic takeout flavor, and I’m still functioning on that one, however this version is wonderful in it’s own manner.


Traditionally lo mein sauce is formed of condiment and vegetable oil with another seasonings (like garlic, ginger, and oyster sauce).  For my version i take advantage of a mix of sunshine and dark soy sauces to deepen the umami flavor, and a few chile paste and sriracha to spice things up a touch.

Lo mein is formed victimization soft and slightly chewy noodles, that ar tossed during a sauce, whereas dish is formed victimization slightly diluent noodles that ar stir deep-fried till slightly crisp. each ar delicious, it comes right down to that texture of noodle you’d prefer!

INGREDIENTS
SAUCE

  • 1/3 cup light-weight condiment
  • 2 Tbsp refined sugar
  • 1 Tbsp dark condiment
  • 1 Tbsp oyster sauce
  • 1 Tbsp grated recent ginger
  • 4 cloves garlic, minced
  • 2 tsp sambal oelek (ground recent chile paste)
  • 2 tsp vegetable oil
  • drizzle of sriracha sauce

LO MEIN

  • 2 lbs. deboned skinless chicken thighs, cut of excess fat
  • 2 cups broccoli florets
  • 1 cup snow peas
  • 1 cup chopped carrots
  • 1 red bell pepper, thinly sliced
  • 5 oz will sliced water chestnuts, drained
  • 1 lb. dried lo mein noodles
  • sesame seeds, for garnish
  • sliced inexperienced onions, for garnish

INSTRUCTIONS

  1. Add chicken thighs to bottom of slow cooking utensil insert.  Whisk along sauce ingredients and pour over chicken. cowl and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.
  2. Remove chicken from slow cooking utensil, shred, then add back to slow cooking utensil with juice and sauce.
  3. Add broccoli, snow peas, carrots, bell pepper and water chestnuts, and stir. cowl and cook on HIGH for quarter-hour, till vegetables ar tender.
  4. While vegetables ar cookery, boil and drain food per package directions, then increase crockpot with chicken and vegetables.  Stir well, then serve with garnishes, if desired.
