Cheesy Baked Tomato With Mozzarella & Parmesan

BAKED TOMATOES are a super quick and super easy side dish or appetizer for any occasion! These cheesy Baked Tomatoes with Mozzarella and Parmesan cheese are so simple yet incredibly delicious. They are always a hit when we make them and get eaten right away. These Baked Parmesan Tomatoes are just too tasty and fresh.


Baked Tomatoes with Mozzarella and Parmesan are the easiest appetizer or side dish you could make. I absolutely love the simple flavors of tomato, mozzarella, and basil (as you can probably tell by the many caprese inspired recipes on this site).

With Thanksgiving only days away, it feels like a mad dash to finalize the menu with delicious (AND EASY) sides for Thursday. Thanksgiving is at our house this year, so I’m feeling the pressure! I want to do some unique recipes (my Hawaiian Sweet Bread Stuffing will be the star of the side dish show!). But I also want to add in a few simple recipes so that I can enjoy the day with the fam.

These Baked Parmesan Tomatoes are just the thing to complete our meal! Just slice up a tomato, cover them with cheese, and pop them in the oven. In no time at all these tasty little tomatoes are ready for eating.

INGREDIENTS

  • 4 roma tomatoes sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 1/2 cup fresh basil chopped
  • olive oil

INSTRUCTIONS

  1. Preheat oven to 400F
  2. Place tomato slices on a parchment lined baking sheet
  3. Top each tomato with a layer or parmesan and then a layer or mozzarella
  4. Sprinkle the chopped basil on top of each tomato
  5. Drizzle lightly with olive oil
  6. Bake for 8-10 minutes or until cheese is melted and bubbly
  7. Turn off oven and broil for 2-3 minutes to brown the cheese
  8. Serve immediately. Enjoy!
