Ultimate Gooey Chocolate Chip Cookies

So here’s the deal folks. You make eggless chocolate chip cookie dough, roll it into little balls, freeze them until they’re completely hardened, then you make regular chocolate chip cookie dough, wrap the cookie dough around the frozen cookie dough, and bake. Out come warm, gooey chocolate chip cookies filled with unbaked cookie dough. Genius! I found the idea on a blog I follow, Cookies and Cups. Thanks to Shelly Jaronsky, my chocolate chip cookies will never be the same.



Just look at all that chocolatey goo. They’re of course going to be gooier when they first come out of the oven, which is when I took these shots. However, even when they’re cooled down, it’s a really cool concept to have completely unbaked chocolate chip cookie dough inside of your chocolate chip cookie! If you’re like me and secretly like the dough more than you like the cookie, this is the perfect result for you. I was a little afraid when making these that the regular cookie dough would melt around the frozen cookie dough because that’s what it was looking like halfway through the baking time, but then they rose and came out perfect. They’re just perfect, I’m telling you.

Ingredients
Cookie dough:

  • ½ cup butter, softened
  • ½ cup light brown sugar
  • ½ tsp. salt
  • 1 tsp. vanilla
  • 1½ Tbsp. milk
  • 1 cup flour
  • 1 cup chocolate chips*

Cookies:

  • ¾ cup butter, softened
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp. vanilla
  • ½ tsp. kosher salt
  • ¾ tsp. baking soda
  • 2¼ cups all-purpose flour
  • 1½ cups chocolate chips

Instructions

  1. Make the cookie dough:
  2. In the bowl of a stand mixer, beat the butter and brown sugar until fluffy. Add the salt, vanilla, and milk and mix well.
  3. Add the flour and mix until no streaks remain, then quickly add the chocolate chips.
